Chili Cheese Toast

This spiced up cheese toastie is inspired by a massively popular snack in India by the same name, which is pure, decadent deliciousness. There are many variations, but common themes are green chili, cheese, garlic, and butter, served on classic sandwich bread. And while the gold standard in India is to use Amul, a processed cheese, I prefer a sharp white cheddar.

Serves 4

Ingredients

Topping

2 teaspoons finely chopped fresh Serrano or Jalapeño chilies, including seeds

2 to 3 scallions, finely chopped, white and green parts

2 cups grated white cheddar

Freshly ground black pepper to taste

 

Butter

1 tablespoon butter, softened to room temperature

1 small garlic clove finely minced


Four 4 x 4-inch slices of sandwich bread


Garnish

Maya Kaimal Chili Crisp

Chopped cilantro


Notes

You can use part mozzarella if you like it gooier!

Preparation

Step 1
Preheat the broiler and set the top rack 4 to 5-inches below the heat.

Step 2
Mix the topping: In a medium bowl, combine the green chili, scallion, cheese and a few grindings of fresh pepper and mix well. Set aside.

Step 3
Make the butter: In a small bowl, combine the soft butter with the garlic, and blend well.

Step 4
Spread the butter equally over one side of each of the four slices of bread. Place the bread slices on a baking sheet, butter side up, and broil 2 minutes or until they are golden. Remove from the oven and set on a heat-proof surface.

Step 5
Flip the bread. Divide the cheese and scallion mixture equally among the slices, gently pressing it into the bread, then broil until cheese is bubbly, which will take just over 2 minutes. Remove from the oven, cut diagonally, drizzle liberally with Maya Kaimal Chili Crisp and sprinkle with cilantro and serve immediately.
