Mango Lassi with Chili Crisp
This simple recipe is adapted from my book Curried Favors. The thing that makes it so special is Alphonso mango pulp, which you can get at Indian grocery stores. Alphonsos are known as the King of Mangoes because they’re so sweet and rich, but they’re hard to get here. Fortunately, the canned kind is great!
Serves 2-4
Ingredients
1 cup Alphonso mango pulp, or more to taste (Indian grocers sell the best kind)
2 cups plain yogurt (not Greek)
1/2 cup water
2 tablespoons sugar
Maya Kaimal Chili Crisp, for garnish
Preparation
Step 1
Combine all ingredients except Chili Crisp in a blender and process for 10 seconds or long enough to combine and get frothy.
Step 2
Halfway fill glasses with ice cubes. Pour lassi over the ice. Drizzle each with a spoonful of Chili Crisp and serve.
