Black Lentil Grain Bowl
Grain bowls can be the perfect meal solution anytime of year, we love making them as a good way to add fresh vegetables to a meal. When you use our rice and dal, preparing these bowls couldn’t be easier.

Ingredients
4 baby bok choy, trimmed and cut in half lengthwise
1 package Maya Kaimal Black Lentil Everyday Dal
1 package Maya Kaimal White Basmati Rice
Pickled red onion, see note.
Cherry tomatoes, halved
Yogurt
Cilantro for garnish
Preparation
Step 1
Heat a cast iron or nonstick pan over medium heat. Add a tablespoon of vegetable oil and arrange the bok choy, cut side down in the pan. When seared, turn over with tongs and continue to cook until tender.
Step 2
Meanwhile, heat the Black Lentil Dal and the White Basmati Rice according to package directions.
Step 3
In two bowls, divide the rice, dal, bok choy and remaining ingredients. Serve warm.
