Coconut Shrimp Curry with Green Beans
All you need is three ingredients to make this delicious meal. A combination of our zesty Coconut Curry Simmer Sauce and coconut oil gives this dish an extra boost of flavor and transports you to the lush tropics. This version is made with shrimp and green beans, but you can use your choice of seafood. Using a jar of our simmer sauce ensures that very little prep time is required!

Ingredients
1 tbsp coconut oil or vegetable oil
1 lb medium shrimp, peeled and deveined
1 jar Maya Kaimal Coconut Curry
1 cup frozen green beans
Sliced red chili and lime wedges for garnish (optional)
Preparation
Step 1
In a deep skillet or wok, heat the oil over medium. Add the shrimp and stir frequently until just pink but not cooked through
Step 2
Add the sauce and green beans and bring to a simmer. Gently cook for 5-8 minutes until shrimp are cooked. Rinse the jar with 1/4 cup water.
Step 3
Garnish with thinly sliced red chili if you like. Serve over rice, with lime wedges on the side.
